อาหารเป็นพิษ เกิดจากการรับประทานอาหารที่มีการปนเปื้อนของเชื้อโรค รวมไปถึงพวกแบคทีเรีย ไวรัส และปรสิต หรือพิษของมัน เป็นสาเหตุที่พบได้ทั่วไปของการเกิดอาการอาหารเป็นพิษ

อาการ

สาเหตุ
การปนเปื้อนในอาหารเกิดขึ้นได้ในทุกขั้นตอนของกระบวนการผลิตตั้งแต่ การปลูก การเก็บเกี่ยว การแปรรูป การเก็บรักษา การขนส่ง หรือการเตรียมอาหาร การถ่ายเทของสารปนเปื้อนจากพื้นผิวหนึ่งไปสู่อีกพื้นผิวหนึ่งก็เป็นไปได้อยู่บ่อยๆ บางบริษัทอย่าง CP นั้นมีการควบคุมกระบวนการผลิตอย่างเคร่งครัดตั้งแต่ต้นจนจบ เริ่มจากกระบวนการปลูก การผลิต ไปจนถึงการปรุงและการบรรจุลงบรรจุภัณฑ์ การควบคุมอุณหภูมิตลอดระยะทางไปจนถึงหน้าชั้นวาง ทำให้เราต้องมาหวนคิดว่า “ความสดใหม่” หรืออาหารที่ปรุงจากร้านอาหารนั้นดีต่อสุขภาพมากกว่าอาหารที่แพ็คบรรจุเรียบร้อยจริงหรือ นั่นอาจจะจริงในบางประเทศ แต่สำหรับในประเทศไทย เนื่องด้วยมาตรการในการควบคุมการผลิตอาหารและการตรวจสอบอนามัยนั้นมีน้อย ทำให้ข้อเท็จจริงที่ว่าอาหารที่บรรจุไว้แล้วมักมีความปลอดภัยมากกว่า
ถ้าคุณรับประทานอาหารตามริมถนน ส่วนใหญ่แล้วอาหารไม่ได้ถูกหยิบจับและปรุงอย่างถูกต้องและมีโอกาสสูงที่คุณจะมีอาการป่วยหลังจากนั้น

- กลุ่มผู้ป่วยโรคเรื้อรัง การมีโรคเรื้อรัง อย่างเช่น เบาหวาน โรคตับ หรือ เอดส์ หรือการได้รับเคมีบำบัดหรือการฉายแสงสำหรับการรักษาโรคมะเร็ง มีผลต่อการลดระบบภูมิคุ้มกันให้ต่ำลง
อาการแทรกซ้อน
อาการแทรกซ้อนที่พบประจำคือ อาการขาดน้ำ นั่นคือ การสูญเสียน้ำและเกลือแร่ แร่ธาตุที่สำคัญอย่างรุนแรง ถ้าคุณเป็นผู้ใหญ่ที่มีการดื่มน้ำเป็นประจำอย่างสม่ำเสมอ ปริมาณน้ำที่มีในร่างกายจะไปชดเชยการสูญเสียน้ำจากการอาเจียนและการท้องเสีย ก็จะไม่เกิดอาการขาดน้ำ
ทารก และผู้สูงอายุ และกลุ่มคนที่มีระบบภูมิคุ้มกันต่ำหรือกลุ่มผู้ป่วยโรคเรื้อรัง อาจจะมีอาการขาดน้ำอย่างรุนแรงเมื่อสูญเสียน้ำจนร่างกายไม่สามารถทดแทนได้ทัน ในกรณีเช่นนี้ อาจจต้องการการดูแลจากโรงพยาบาลคือการรับน้ำเกลือเข้าเส้น ในกรณีร้ายแรงก็อาจเสียชีวิตได้
การป้องกัน
การป้องกันอาหารเป็นพิษที่บ้าน
- ล้างมืออุปกรณ์ทำครัวและพื้นผิวของอาหารบ่อยๆ ล้างมือให้สะอาดด้วยน้ำสบู่อุ่นก่อนและหลังการหยิบจับและเตรียมอาหาร ใช้น้ำสบู่ร้อนล้างอุปกรณ์เครื่องครัว เขียง และพื้นผิวสัมผัสที่ใช้งาน
- เก็บรักษาอาหารดิบแยกจากอาหารพร้อมรับประทานอื่นๆเวลาที่คุณไปช็อปปิ้ง เตรียมอาหาร หรือเก็บอาหาร ให้เก็บเนื้อสัตว์ดิบ สัตว์ปีก ปลา และอาหารทะเลมีเปลือกห่างไกลจากอาหารสุกอื่นๆ เพื่อป้องกันการถ่ายเทของการปนเปื้อน
- ปรุงอาหารที่อุณหภูมิที่ปลอดภัย วิธีที่ดีที่สุดในการตรวจเช็คว่าอาหารที่ปรุงนั้นอยู่ในอุณหภูมิที่ปลอดภัยหรือไม่ คือ การใช้เทอร์โมมิเตอร์สำหรับวัดอุณหภูมิในอาหาร คุณสามารถฆ่าเชื้อโรคในอาหารส่วนใหญ่ถ้าปรุงในอุณหภูมิที่ถูกต้อง
- นำอาหารที่เสียง่ายแช่ตู้เย็นหรือช่องแช่แข็งทันทีภายในสองชั่วโมงหลังจากซื้ออาหารหรือเตรียมอาหาร ถ้าอุณหภูมิห้องสูงกว่า 90 F (32.2 เซลเซียส) ให้นำอาหารเข้าตู้เย็นภายในหนึ่งชั่วโมง

Food Poisoning prevention for your race
How many times have you had bad food and ended up with nausea, vomiting or diarrhea? Most of the time we have no idea how the food we eat is
- Produced
- Handled
- Prepared
- Cooked
As athletes we train hard to reach our best at a goal event, the last thing you want is to be ill due to bad food on race day. Also, as athletes in peak condition, our immune systems can be at a low level, so are more likely to suffer from even mild food poisoning.
Food poisoning, is caused by eating contaminated food. Infectious organisms — including bacteria, viruses and parasites — or their toxins are the most common causes of food poisoning.
Infectious organisms or their toxins can contaminate food at any point of processing or production. Contamination can also occur at home if food is incorrectly handled or cooked.
Symptoms
Food poisoning symptoms vary with the source of contamination. Most types of food poisoning cause one or more of the following signs and symptoms:
- Nausea
- Vomiting
- Watery or bloody diarrhea
- Abdominal pain and cramps
- Fever
Signs and symptoms may start within hours after eating the contaminated food, or they may begin days or even weeks later. Sickness caused by food poisoning generally lasts from a few hours to several days.
Causes
Contamination of food can happen at any point of production: growing, harvesting, processing, storing, shipping or preparing. Cross-contamination — the transfer of harmful organisms from one surface to another — is often the cause. Some companies like CP carefully control the whole process of growing the produce to cooking and prepackaging and temperature control to put it on the shelves. One way of thinking is that ‘fresh’ or restaurant food is healthier than pre-packaged food. That may be true in many countries, but in Thailand, with less health and hygiene checks, that is not always true, it may be safer to keep to food that is pre packed.
If you eat at a street restaurant, most of the time, the food is not handled or prepared correctly and you can easily feel ill after.
Many bacterial, viral or parasitic agents cause food poisoning. The following table shows some of the possible contaminants, when you might start to feel symptoms and common ways the organism is spread.
Risk factors
Whether you become ill after eating contaminated food depends on the organism, the amount of exposure, your age and your health. High-risk groups include:
- Older adults. As you get older, your immune system may not respond as quickly and as effectively to infectious organisms as when you were younger.
- Pregnant women. During pregnancy, changes in metabolism and circulation may increase the risk of food poisoning. Your reaction may be more severe during pregnancy. Rarely, your baby may get sick, too.
- Infants and young children. Their immune systems haven’t fully developed.
- People with chronic disease. Having a chronic condition — such as diabetes, liver disease or AIDS — or receiving chemotherapy or radiation therapy for cancer reduces your immune response.
Complications
The most common serious complication of food poisoning is dehydration — a severe loss of water and essential salts and minerals. If you’re a healthy adult and drink enough to replace fluids you lose from vomiting and diarrhea, dehydration shouldn’t be a problem.
Infants, older adults and people with suppressed immune systems or chronic illnesses may become severely dehydrated when they lose more fluids than they can replace. In that case, they may need to be hospitalized and receive intravenous fluids. In extreme cases, dehydration can be fatal.
Prevention
To prevent food poisoning at home:
- Wash your hands, utensils and food surfaces often. Wash your hands well with warm, soapy water before and after handling or preparing food. Use hot, soapy water to wash utensils, cutting boards and other surfaces you use.
- Keep raw foods separate from ready-to-eat foods. When shopping, preparing food or storing food, keep raw meat, poultry, fish and shellfish away from other foods. This prevents cross-contamination.
- Cook foods to a safe temperature. The best way to tell if foods are cooked to a safe temperature is to use a food thermometer. You can kill harmful organisms in most foods by cooking them to the right temperature.
- Refrigerate or freeze perishable foods promptly — within two hours of purchasing or preparing them. If the room temperature is above 90 F (32.2 C), refrigerate perishable foods within one hour.
- Defrost food safely. Don’t thaw food at room temperature. The safest way to thaw food is to defrost it in the refrigerator. If you microwave frozen food using the “defrost” or “50 percent power” setting, be sure to cook it immediately.
- Throw it out when in doubt. If you aren’t sure if a food has been prepared, served or stored safely, discard it. Food left at room temperature too long may contain bacteria or toxins that can’t be destroyed by cooking. Don’t taste food that you’re unsure about — just throw it out. Even if it looks and smells fine, it may not be safe to eat.
